called Per Se located in the Time Warner Center at Columbus Circle. How
is it possible that a chef from a tiny town in California can open in New York
City to an instant waiting list? |

As students of best business practices we
would like to point out that Chef Keller took most of his California team,
including his dishwasher, to Manhattan to open Per Se and to train their
counterparts in the East. While bad restaurant owners don't even know the name
of their dishwasher, Thomas Keller knows this is a key position worthy of
respect and proper training. |

| This
man, considered by many to be the best American chef, told us that he was
completely out of cash in 1992. The pain of being broke was sharp the day he
drove from Los Angeles to Yountville to look at a building that was for
sale. |

| He fell
in love. That love focused his mind on how he might buy the charming structure
that was built in 1900 out of river rock and wood. |

| It had
been a restaurant but the owners were tired and closed it to simply sell the
building. Still broke, in 1994, Thomas Keller bought the sweet spot of his
dreams. |
